城市餐飲格局時空差異及影響因素分析——以鹽城市為例

摘要: 良好的餐飲業(yè)對城市經(jīng)濟和旅游業(yè)的發(fā)展具有推動作用,餐飲格局是城市餐飲業(yè)發(fā)展的重要表現(xiàn)特征?;贓SDA分析方法對案例地江蘇鹽城市2012年與2018年的餐飲格局進行時空差異對比研究,并通過對不同層次等級餐飲格局的變化探究城市餐飲業(yè)發(fā)展與區(qū)域經(jīng)濟發(fā)達程度、旅游活動影響、商業(yè)綜合體以及美食街興起的關(guān)聯(lián)性。結(jié)果表明:以鹽城市為代表的經(jīng)濟欠發(fā)達城市餐飲格局在發(fā)展過程中受到城市規(guī)劃的重要影響,以商業(yè)區(qū)及美食街為主要載體,同時受到區(qū)域經(jīng)濟發(fā)展與旅游活動的正向推動,在發(fā)展過程中中低檔型餐飲空間格局受到互聯(lián)網(wǎng)產(chǎn)業(yè)模式的影響。
A good catering industry has a driving role in the development of urban economy and tourism,and the catering pattern is an important performance feature of the development of urban catering industry. Based on the ESDA analysis method,this paper compares the spatial and temporal differences between the 2012 and2018 catering patterns in Yancheng,Jiangsu,and explores the association between the changes in catering patterns at different levels and development of urban catering industry,regional economic development,the impact of tourism activities,and the rise of the food street. The results show that the catering pattern of economically underdeveloped cities represented by Yancheng is affected by urban planning in the development process,with commercial districts and food street as the main carriers,and is also driven by regional economic development and tourism activities. The medium and low-end catering spactial pattern in the development process is affected by the Internet industry model.
